The Pavelots have been cultivating vines in Savigny-lès-Beaune just before the French revolution and have made some of the best wines in the village since. Their large range of vineyards have produced lacy, delicate and well priced Burgundy one usually associates with Savigny, like Serpentières and Peuillets, as well as hugely structured, gravelly, and age-worthy monuments like Gravains, Guettes and Dominode. If you have interest in wines that taste of history and tradition, this is a must taste estate for you. In scoring this wine a 92-94 points, Robert Parker’s Wine Advocate says: The 2015 Savigny-lès-Beaune 1er Cru Les Guettes has a very refined bouquet with perhaps more mineral expression than the Les Lavières, if not quite the degree of luxuriousness. The palate is very refined, the entry almost understated, but there is a crescendo of flavors as it fans out with black cherries, boysenberry and a pinch of spice towards the finish. Given the substance on display here, it would not surprise me if this gives drinking pleasure over 12-15 years.
