Organic Rosé from Corbieres

Married couple Didier and Jenn fell in love and decided to make wine. Sounds good to us. They own around 7 hectares of land and organically farm their fruit. The hill where the winery and house sits is a declared bird refuge, (thus Colline de Hirondelle/Hill of the Swallow!)

Although they are within the AOC of Corbieres, they do not use the Corbieres appellation for their wines as they use a rare grape that is not part allowed in the appellation. This grape is called Chanançon, which is a genetic cross between Grenache and Jurançon Noir.) These wines are fresh and full of energy. This rosé is medium dark color, with plenty of lift and acidity. Saignée method (bleeding) and aged and fermented in stainless steel tank. Great aperitif and will pair beautifully with cheeses, fruits, and fresh fish.
