Perfect Pairing with Asian Cuisine!

Cembra Cantina di Montagna cooperative means literally “Cembra Mountain Winery,”  as the cooperative is one of the highest-lying wineries in Italy, at roughly 700 meters. The winemaking facility is located in the namesake town of Cembra in the heart of the Cembra Valley, the Avisio River Valley, a tributary of the Adige, which flows through the heart of Trentino-Alto Adige. The soil types in the valley’s walls are predominantly volcanic in nature. As you drive up the steep road that leads through the valley, you can see the famous porphyry quarries, with their unmistakable reddish color.

All farming by Cembra growers is done by hand in strict compliance with Italy’s Integrated Crop Management National Quality System. Perhaps the most impressive thing about the cooperative is the winery’s vineyard zoning project, completed and implemented more than 30 years ago.

Grapes are soft-pressed, and fermented at controlled temperature in stainless steel tank. 4-5 months of aging on its lees prior to bottling.

The 2018 Sauvignon (Blanc) is straw-yellow colored with green hues, with varying aromas of spicy notes ranging from nettle leaves to boxwood, gooseberry and grapefruit. Fresh and mineral on the palate, with a long-lasting soft and creamy, velvety finish. This is a wine that is very approachable, and will be the perfect accompaniment to spicy food, particularly Thai and Vietnamese.

The 2017 vintage of this wine received a 90 points from James Suckling; the 2018 has yet to be scored, but is a comparable, if not superior, wine.
