Beautifully balanced rosé from Provence
The vineyards of Château Roubine, producer of the Sainte-Béatrice line, bordered by a cirque of pines and oaks, is located in one piece in the heart of the Var between Verdon and the Mediterranean, offers a great diversity of its thirteen grape varieties. Its natural drainage (“roubine” means “stream” in Provençal), by its ideal east / west orientation, by its clay-limestone soil, provides privileged conditions for the production of high quality wines.
During the cool mornings of the harvest, the grapes arrive in the cellar, where skin maceration takes place for a few hours (Cinsault and Grenache grapes.) Next, the soft pneumatic pressing starts with selection of the first juices. Thermo-regulated fermentation between 16 and 19 ° C, followed by aging on fine lees until bottling.
The wine is a beautiful pale pink, shiny, with salmon reflections. On the nose you’ll detect dried fruit, almond, raisins, pistachio mixed with mineral notes of chalk. The mouth is full, balanced, and delicious ending with cherries and kirsch (fermented cherry brandy.)
A beautiful Côtes de Provence rosé to drink throughout the year. Kosher, Kosher for Passover.
